i am. it is so nice to have some structure and discipline again. i might not say that tomorrow or the next day, when i am really craving one of those truffles at mom's house, but as of right now, it feels really good. i only have a couple of cups of water left, but i need to install a bathroom in my pants.
stace, i think it is a great idea to add recipes. i would love to see anything that you guys have. a great place for recipes is hungry-girl.com. they send out newsletters to your email and they sometimes have some good ideas. i am planning on making baked chimichangas tonight with mom's leftover turkey. they are yummy!
here's the recipe if you want it:
2 1/2 c. shredded, cooked chicken (or turkey)
1 c. salsa
3/4 tsp. ground cumin
1/2 tsp. dried oregano
6 flour tortillas (10 inch), warmed
3/4 c. shredded cheese
1 c. chicken broth
2 tsp. chicken bouillon
1/8 tsp. pepper
1/4 c. four
1 c. skim milk
1 can (4 oz.) chopped green chilies
in a large skilled, simmer the chicken, salsa, cumin and oregano until heated through and most of the liquid is evaporated. place 1/2 c. down the center of each tortilla; top with 2 tablespoons of cheese.
fold sides and ends over filling; roll up. place seam down in a 9x13 pan (greased). bake, uncovered at 425 degrees for 15 minutes or until browned.
in a saucepan, heat broth, bouillon and pepper until dissolved. combine flour and milk until smooth; stir into broth. bring to a boil; cook and stir for 2 minutes or until thickened. stir in chillies; heat through. put on chimichangas right before serving.

How many points per serving? I wish I knew the point system as well as you guys, I would love to do weight watchers instead of my method.
ReplyDeletei used regular tortillas so it was 8 points for one chimichanga, but it was very filling. when i go to the store next, i am going to get tortillas that are less calories. your spaghetti squash recipe sounded delicious. i love spaghetti squash with "i can't believe it's not butter" spray, salt and pepper, a few bacon bits, a little parmesean cheese and a few roasted pine nuts. yum yum!
