better week

the scale was better this week than last. i sure am happy about that. biggest loser has taught me that the second week is always the hardest with weight loss, so let us all press on.

here's a little something that i cooked up in the crockpot (i saw it on good things utah):

5-6 chicken breasts, frozen
1 can corn, drained (i used some frozen)
1 can black beans, drained
15 oz. salsa
lime juice to taste

cook on high for 4 hours. shred the chicken. on good things utah they then added cream cheese (you could use fat-free), but we ate ours without. i have eaten it twice now. once on shredded lettuce as a salad with fat-free sour cream and toasted wheat tortilla strips and once as a soup kinda thing.

i am going grocery shopping today and i can't wait to get the ingredients to try more of your recipes.

  3. Thanks for the recipe. Don't know if you got this off the show today, but if you watched today, the girl on the show (Christy Graves Medina) who shared her weight loss success (lost 150 lbs), was one of my Laurels in our ward in California...fun to see her!
