2 tbsp olive oil
1 onion, chopped
1/2 lb. chicken, cubed or 2 cans chicken
1 garlic clove (I use 1/2 tsp garlic salt & 1/2 tsp garlic powder)
4 cans 99% fat free chicken broth
1 can water
2 mediun carrots, chopped
2 celery stalks, chopped
1/2 cup frozen peas
1 tsp dried basil
2 cups whole wheat pasta, small
4 tbsp lemon juice
In large suacepan, saute onion in oil until tender. Add chicken and garlic until lightly browned. Stir in broth, water, carrots, celery, peas and basil. Bring to boil. Reduce heat: cover and simmer for 5 minutes. Add pasta. Cover and simmer for 10 minutes or until pasta is tender. Stir in lemon juice. Add pepper to taste.
Serves 6

This sounds really good Kim. I guess I need to get "with it" and start posting a healthy recipe or two! Had another perfect day and just finished my water and 1 hour of exercise. This has been a good week.
